Actually I solved this already, sorry, should have updated the post. I was an idiot, the camera was using smooth tangents on its keys, but it was constrained to a null which was still on stepped tangents

You can try turning off Property Maps in the Visibility Options as well but that doesn't sound like default behaviour. Do you mean that anytime you rotate your viewport while not in weight painting mode, it defaults back to Constant shading with the weights visible?
